This is, perhaps, the most popular American dessert also known as “cap-cake”. Many people don’t distinguish muffins and cakes. Well, everything is simple — muffins have more friable consistence. Because of this they are baked small portions and with special paper (which I call “diaper”) in another case they do not get baked through and won’t hold an unbroken form. And cakes are more dense — I prefer to bake them in big forms, and then to cut into portion. One more interesting fact: a muffin is without cream, and a cap-cake is the same, but it is obligatory with a cream. Oh, these Americans…

My favourite variant is banana one. On this apportionment we will get 20 pieces. If you want to make variant with a cream, use the recipe of the classical butter cream as for the English cake, and add a little of yellow dye there for a nice look…

Recipe:

  • 200 grams of butter
  • 400 grams of sugar
  • 4 eggs
  • 130 ml of fat cream
  • 400 grams of the peeled bananas
  • 400 grams of flour
  • 150 grams of a walnut
  • 10 grams of a baking powder
  • 2 grams of vanillin

To do:

Softened (not cold and not melted) butter put in a dough dish (a bowl from the mixer) together with sugar. Shake up an attachment “blade” to a flaffy consistence, this is a secret of success.

While butter with sugar is mixed, divide egg yolks and white eggs. Remember that white egg shouldn’t be totally without yolk. But if there is a little of yolk in white egg, there is nothing terrible in it.

Peel bananas, cut it into cubes and set aside. Also chop a walnut beforehand, mix with flour and vanillin. In general, whatever you cook, make it a habit to prepare ingredients beforehand.

Cream, as well as white egg, has to be whisked separately from each other, of course. And put yolk one by one into the first mixture when it becomes fluffy enough.

As soon as you will put into all yolks, add whisked cream to the mixture. It is possible to mix it with a blade or, even better, with a hand.

Then we put bananas, mix with the white eggs, whisked to a condition of “cloud”. And, at last, add flour with the walnut and baking powder. Delicately blend until it smooth.

Lay out it in the “diaper” forms or, if you don’t have them, simply cut out paper for the baking. Fill in the mixture in forms almost to the brim, and bake at 180 degrees for about 15-20 minutes.
