Better known cake can hardly be imagined. Every decent housewife should be able to prepare this simple dessert. Everything is simple: the main thing is not to get carried away with the complication. After all, simplicity is genius. And of course bake it well, because the mass is biscuit, and, without any additives, is liquid.

Many people prepare Charlotte with a sandy dough, but the real Charlotte is a biscuit cake with apple and cinnamon, that’s all. The result — nothing but apples do not have to put (an almond slice or walnut crumb except). recipe:

  • 4 green apples
  • 30 grams of cinnamon
  • 4 chicken eggs
  • 250 grams of sugar
  • 250 grams of flour
  • packet of vanillin

to do:

Clear the apples from the skin, cut two of them in neat slices, while the other two rub on a coarse grater. Separate the yolks from the whites. First, beat the egg yolks with 200 grams of sugar. Remember, apples and cinnamon you add as you like. Reference to your preferences. Important — 20 grams of cinnamon mixed with 200 grams of sugar and other 10 grams of cinnamon add into the grated apples.

Beat the egg yolks with the sugar and cinnamon mixture at a high speed of mixer. Prepare a shape, place the parchment on the bottom of the form, and place slices of apples. You can sprinkle them with cane sugar, nuts or candied fruit. But I do not advise to spoil with these little things a wonderful apple pie. Once the egg yolks whipped into a thick brown mixture, pour them into the grated apples. Clean the bowl from the mixer and pour back the whites. Remember that if you get the whites in the egg yolks do not worry.

But the yolk in the whites prevents whipping. Beat identical the whites but it is necessary to enter the sugar only after it takes the form of the cloud. The remaining 50 grams of sugar (without cinnamon) pour in the whipped whites. Once the mix and become a «meringue», add it to the mixture of yolk and apples. Stir with shovel or clean hands, slowly adding the flour with the vanilla (pre miss it through a sieve, take it for a rule). If you want a lush cake, you can add a little baking powder. The finished mixture without lumps, pour into slices of apples in the form.

Bake for about half an hour in the oven at 180 degrees. Do not try to put something extra into a charlotte. My experiments with berries, for example, and figs end badly. In fact it is — a biscuit, and it does not like moisture. So do not fill a pie with any juice, it is necessary to bake and serve hot with ice cream. And on top, you can put any fresh berries. And do not forget to turn the cake after baking, it would be evident that dessert would become visually pleasing.
