The pie is an open pie with any filling on shortcake dough. However for me this is one of the favourite desserts, therefore we will do dough in the special author’s way. It is necessary to roll it thinly on an iron or glass form. I prefer custard-based filling, in this case, with a lemon. On the top of the pie you can put any berry or fruit (not necessarily a lemon) and cover it with confectionery gel. The prepared dessert can be stored in the refrigerator for about one week. This stuffing will be enough for one big pie, two small ones or you can make several not very big ones – you will get the portioned dessert, very delicately…

The recipe of the dough:

  • 250 grams of margarine
  • 250 grams of powdered sugar
  • a packet of vanillin
  • 1 egg and 1 yolk
  • 150 grams of sour cream
  • 10 grams of baking powder
  • 30 ml of lemon juice
  • 20 grams of lemon rind
  • 500 grams of flour

To do:

In a mixer with an attachment “blade” blend margarine, powdered sugar, vanillin until it smooth. Then add an egg and a yolk and mix again. Shift it from the mixer in any container.

Now it is necessary to mix an attachment “whisk” the following ingredients in the mixer separately: sour cream and baking powder. Prevent it a little and add juice and the rind.

Joint two mixes and stir with a hand adding flour gradually. To be sure almost ready mix blend in the mixer with an attachment «hook». Put it into a refrigerator for two hours and then it can be used. The dough has to be gentle, distribute it in a form plentifully using flour.

The recipe of the filling:

  • 300 grams of custard (or you can simplify yourself the task and use “kremika” – this is a powder (dry cream) which is on sale in confectionery departments, stir it in the following proportions: 100 grams of kremika, 230 ml of water, 60 grams of flour)
  • 128 ml of lemon (fresh) juice
  • 35 grams of lemon rind
  • 6 eggs
  • 300 grams of sugar

one lemon or orange for decoration (it should be boiled in a syrup, the syrup is water with sugar in identical proportions, all this in order to soften the peel; then it is necessary to cut it into equal segments and to lay out as you wish on slightly backed filling)

If you use dry mix, mix kremika at first. If you use custard, which you can also find among recipes, it is ready-made. It is only necessary to follow the next points…

Mix lemon juice and the rind with custard or kremika until it smooth.

Whip eggs with sugar with a whisk in a separate container to the condition of foam. Put into the mass of custard with the rind and lemon juice. Stir it properly with a whisk. The prepared mixture has to be liquid — fill in the pie almost to the brim. Bake for about 40 minutes at 145 degrees… Then lay out berries or fruit for a good look, cover it with confectionery gel if it is available.
