This is the best that can be done with coconut. Actually the suggested dessert consists of coconut flakes completely. For the first time I tasted it being on training in France.

In the streets in dessert stalls, as a rule, this “cake” (as it is called by Frenchmen) is sold in one row with salty beer bread in the form of croissants. Only three ingredients and nothing else. For me it is an excellent cookies but if to bake it in a certain form and to candy with milk chocolate, it will be like “bounty”.

Recipe:

  • 300 grams of sugar
  • 5 white eggs
  • 250 grams of coconut shaving
  • a bit of coconut syrup
  • a vanilla pod to one’s mind

To do:

Mix sugar and white egg with a whisk a little (if you decide to add vanilla, put kernels to the white egg and then mix). Add shaving and mix with a spoon or a spatula. For more concentrated taste it is possible to add coconut syrup, a couple of teaspoons. There is a variant with alcohol (for example, the coconut liqueur MALIBU) if you like it, you can add it instead of syrup.

When the mixture becomes smooth, shape balls and condense them a little. A baking sheet (a tray for baking) grease with a butter. Lay out balls, but not very close, in order they dodn’t stick together when they widen out in an oven. Bake at 170 degrees for about 10 — 15 minutes. Cookies will be very fragrant, crispy and soft inside.
