This is a gentle, but bold cake. If you decide to make a dietary option, dilute cream with yogurt. Take a low-fat cheese (will be fewer calories), and take less a powdered sugar.

I believe that this dessert is perfect only with strawberries. Season of this amazing berry is very short, but it’s worth it. Unfortunately, I was late and chose the best alternative summer berries — strawberries and blueberries.

recipe:

  • 400 grams of cheese «Mascarpone»
  • 400 grams of cheese «Philadelphia»
  • 300 grams of powdered sugar
  • 800 grams of whipping cream
  • 600 grams of vegetable cream
  • 50 grams of gelatin sheet
  • 1 vanilla pod
  • 30 ml of rum
  • 10 ml of strawberry liqueur
  • 100 ml of strawberry sauce

To begin prepare a small biscuit on classic technology. This is the base of the cake.

Whip the plant cream and put off 100-200 grams of it for the decoration.

If you like, you will be able add a little oil dye(I used purple). Soak in cold water 40 grams of gelatin in a bowl and 10 grams — in the other. Mix both cheese by hand with powdered sugar.

Add 500 ml of whipping cream into the mixture of cheese with powder.

Bring the remaining 300 ml to a boil state with the vanilla bean (always do it, because that way vanilla so fully reveals its own flavor).

Dissolve 40 grams of gelatin in the hot cream and enter the hot mixture into the total mass through a sieve.

Stirring by hand, gradually enter 400 grams of whipped plant cream and pour the rum.

Done, now we have to soak the biscuit by syrup (one to one with sugar water) with strawberry liqueur. Pour the cake mixture on top into the mold.

I decided to split into two parts, the lower — with more strawberries and top – with smaller blueberries. If you like, pour over half and store in the refrigera!
